From Leaf to Cup: The Matcha Creation Process
Shading
In the lush, volcanic landscape of Kagoshima, tea plants are shaded for 3-4 weeks before harvest to limit the plants’ exposure to sunlight. This triggers an increase in chlorophyll production and concentrates amino acids, resulting in a vibrant green color and the smooth, umami flavor that defines our matcha. The shading also boosts the retention of theanine and antioxidants, enhancing both its taste and health benefits.
Hand-Picked Leaves
Once shading is complete, only the finest, youngest leaves are hand-picked from our Kagoshima tea fields. 2 oz hot water (about 175°F)

Steps:
- Sift the Matcha: Sift 1 scoop (½ to 1 tsp) of matcha powder into a bowl.
- Heat Water: Heat 2 oz of water to around 175°F (not boiling, to avoid bitterness).
